Last October, American food professionals visited fermented food producers to deepen their knowledge of Japanese fermentation culture during the “Hakko Tourism in Japan” tour campaign. As part of the tour, organizers held a tasting session where guests gave candid advice from the perspective of the American market to food product manufacturers looking to enter the United States market.
Maho Tanabe is a renowned inner beauty planner and the creator of the “Mirin Sweets and Fermented Foods” workshops held at Minamoto Shokudo. As the owner of the esteemed Minamoto Cafeteria, she has carved a niche for herself in the culinary world with her expertise in creating delectable recipes focusing on fermented foods, particularly using koji and sake.
With a passion for exploring the nexus between food and wellness, Maho has dedicated her career to promoting the concept of “inner beauty” through her culinary creations. In 2017, she had the privilege of working under the guidance of registered dietitian and inner beauty planner, Aoi Kinoshita.
